Last night we had the great opportunity to learn how to make California Roll Sushi from Rhonda Bake. I was very fun and very yummy! For those who couldn't make it this time I have included the recipe/instructions and we hope to see you at our August cooking group.
Perfect Sushi Rice:
2 cups uncooked glutinous white rice (sushi rice)
3 cups of water
1/2 cup rice vinegar
1 tbs vegetable oil
1/4 cup sugar
1 tsp salt
Directions:
1. Rinse the rice in a strainer or colander until the water runs clear. Combine with water in a medium saucepan. Bring to a boil, then reduce heat to low, cover and cook for 20 minutes. Rice should be tender and water should be absorbed. Cool until cool enough to handle.
2. In a small saucepan, combine the rice vinegar, oil, sugar, and salt. Cook over medium heat until the sugar dissolves. Cool, then stir into the cooked rice. When you pour this in to the rice it will seem very wet. Keep stirring and the rice will dry as it cools.
Directions for California Rolls:
1. Use sheets of seaweed that can be purchased from Walmart, Many lands, Chows or another ethnic food store. Cover the seaweed with a layer of the sushi rice (see above).
2. Put thin strips of vegetables of your choice on top of the rice (cucumber, carrots, avocado, etc) then put fish crab or whatever else you choose to put in it.
3. Roll everything using bamboo or plastic wrap. Eat with soy sauce or refrigerate until time to serve.
