"Healthy" Recipe Exchange
Here are the recipes from our get together. Enjoy and let us know if you have any questions or comments!

Chocolate Zucchini Bread
2 ½ c flour
½ c cocoa powder
1 ½ tsp baking powder
1 tsp baking soda
1 tsp cinnamon
¾ tsp salt
1 ½ c sugar
¾ c egg substitute (or 3 whole eggs)
½ c unsweetened applesauce
1/3 c canola oil
2 tsp vanilla
2 c packed, grated zucchini
½ c mini chocolate chips

Preheat oven to 350 degrees. Spray two 8x4 loaf pans with non-stick spray. Set aside.

In a large bowl, combine flour, cocoa, baking powder, baking soda, cinnamon, and salt. Set aside.

In a medium bowl, whisk together sugar, egg substitute, applesauce, oil, and vanilla. Stir in zucchini. Add wet ingredients to dry ingredients. Stir until dry ingredients are just moistened. Fold in chocolate chips.

Spread batter evenly in prepared pans. Bake for 50 minutes or until a toothpick inserted in the center of loaf comes out clean. Cool for 5 minutes in pans. Remove from pans and let cool on a wire rack before serving. (Though it’s mighty hard to wait. We usually devour a whole loaf before it has stopped steaming!)

Night of Service

April's mid-week activity is this Thursday at 6:30pm at the church. There will be service projects, a service auction, and light dinner. Please bring something to go with sandwiches to share. Also, we are looking for someone to help out in the childrens class that night. Please contact Lisa Nelson 916.821.7745 if you are willing to help. We hope to see you there!

April Spotlight

Ashley Blackham is our spotlight this month. She was born in Grants Pass, Oregon. She has lived in many places that include, California, Alabama and Ohio.

Her Parents have been married for 29 years, she has 2 sisters and 2 brothers. She is the second oldest. She and her husband Paul met country dancing in Provo in 2004 they were later married in the Salt Lake Temple on July 19, 2007. Paul is a US army Helicopter Pilot and imsar in Spanish Fork. Ashley went to Capelli (Hair School). She is a beauty school drop out because of their move to Alabama for Flight School. She is now a stay at home mom with two busy little boys. Brayden will be 3 this month and Camden is 1 1/2. The most important things to her are famiy, the gospel and friends.

Some things Ashley does well is Shopping, Hair and Blogging. If she had a free afternoon with no obligations she would Hang out with her mom and go to lunch! Her dream vacation is somewhere Tropical. She would love to go to Hawaii or Cabo, Cancun. Anywhere warm, sunny and a BEACH!! She loves watching the Bachelor and when her sister played soccer for SUU she loved watching her play! She wishes she quilted (her father in law owns a fabric store) She does digital scrapbooking, and recently got a new camera that she loves taking pictures of her kids!

Cleansing the Inner Vessel

Our lesson this past Sunday was on the talk "Cleansing the Inner Vessel" by President Boyd K. Packer given in the October 2010 General Conference. If you want to read the talk it can be found on page 74 of the November 2010 Ensign or you can click here

2011 Birthday Party

We had a great Relief Society birthday party and wanted to thank all of you who worked so hard to make it happen and all of you who attended.


















We had a wonderful dinner of Mexican Chicken Casserole, salad and rolls and then a lovely dessert of centerpiece cakes that our very own sisters made!




We then opened the program portion of our night with a few words from
Brother Brigham Young, followed by these special guests: Emma, Joseph, Eliza R. Snow, and Lucy Mack Smith.














To end, our wonderful RS President sang to us about how our hands are the hands of Heaven and then she spoke to us about how wonderful it is to be part of this great organization!
