Kickboxing Class
A kickboxing class run by Carolyn Cox will begin this Tuesday. It will be held every Tuesday and Thursday at 8:00 pm at the church. It will be in whatever room happens to be available. Look on the door for a note telling which room we are using each day. Come join us in getting healthy and fit.

Book Club Tonight
The book club will be meeting tonight at 6pm at Kelli Wisner's house. We have been reading Princess Academy by Shannon Hale and you are invited to attend even if you didn't read the book. There will be no book club in November and December.

If you signed up to bring a salad or dessert, please bring them to the kitchen by 5:45 pm.
Remember the Relief Society "Swap Meet." Bring your things early (anytime after 5:00) so you can set them out and we can begin promptly at 6:00pm. Bring anything that you don't need and is taking up precious room on your shelves. I even have some extra apricot jam from last years bumper crop that I'm bringing--be creative, just make sure it useful...to somebody! :)
I think you'll love Erin Smith's presentation on "Mommy First Aid." Great info and helpful tips (from a Registered Nurse, no less) for taking care of kids and their "boo-boo's." It's helpful for ANYONE who ever takes care of children.
Our Fall Craft is going to be so fun! I believe it's easy enough to mostly finish before you go home, we've done a lot of the prep work for you. If you signed up and haven't paid, please bring the money with you to Enrichment, we'll have a kit for you. We can stay a little later if needed (8:30 or so) to give you plenty of time to work, visit, and browse!

New Relief Society Presidency
A couple of weeks ago we got a new Relief Society Presidency. Kathy Christensen is the President, Kathy Taylor is the 1st counselor, Erin Brand will continue serving as the 2nd Counselor, and Sarah Maddox will continue serving as the Secretary. We offer our prayers and support to the new presidency and are so grateful for the wonderful service that Debbie Sisson and Courtney Spell gave in the years and months that they were in the presidency.
September Spotlight Leona Haskell
Leona was born in Fruita, Colorado, to Joseph and Donna Valdez. She has five sisters and one brother. Her family moved to Springville when she was two years old, and they have lived here ever since. She was a quite child, but now, in her own words, She's the most talkative of them all. She loves to talk to people (even if she doesn't know them) and make friends.
Leona won a hopscotch tournament when she was in third grade. She enjoyed playing baseball and even joined a team. Her sister said she was the most mechanical member of their family when their very wise father taught them all how to change a tire and do other things that helped keep a car going.
Leona has always enjoyed sewing, which led her to what she now does for a living. She sews drapes and enjoys being her own boss.
Leona's husband, Eldon, is from Payson, and they met through a brother-in-law. They will celebrate their 39th wedding anniversary on October 30th.
Eldon has six children from his first marriage, and he and Leona have two more. Leona was a grandmother at the young age of twenty-six! Her hobby is her twenty-nine gradnchildren. She likes to joke with them about how she got to see Frank Sinatra in concert.
Leona enjoys western books and movies (including John Wayne's movies). If she had a day to choose what she would like to do, it would be to hang out with a friend. She loves our ward and enjoys associating with our beautiful sisters as she serves as our compassionate service leader.

August Spotlight Ellie Campbell
Ellie was born in Salt Lake City, Utah but moved to Scottsdale, Arizona when she was six and claims that as home. She met Robert Campbell at BYU and they were married in the Mesa Arizona Temple on December 22, 2007. Ellie will begin a teaching internship this fall and will be teaching 1st grade at Art City Elementary School. Robert is currently studying Mechanical Engineering at BYU and they have spent the summer apart because he has been working for Raytheon in Tempe, Arizona. The things that are most important to her are her husband and family and the gospel. If she had a free day to do whatever she wanted she would go on a run, play the piano, spend time with her husband, and watch a movie. In that order too! She loves to cook and try out new recipes. Ellie says that she has not had a lot of time for hobbies since she has been finishing up school but now that she is done she hopes to learn sewing, decorating, painting, tae bo, and tons of others.
Butterscotch Blond Brownies:
½ cup butter
2 cups brown sugar
2 eggs
2 cups flour
2 tsp salt
1 tsp vanilla
1 cup pecans
1 cup coconut
1 cup butterscotch chips
Mix in order of ingredients and bake at 350 degrees for 25-30 minutes. Great with cream cheese frosting made from butter, cream cheese, and powdered sugar to taste.

Asian Cooking Group
Last night we had the great opportunity to learn how to make California Roll Sushi from Rhonda Bake. I was very fun and very yummy! For those who couldn't make it this time I have included the recipe/instructions and we hope to see you at our August cooking group.
Perfect Sushi Rice:
2 cups uncooked glutinous white rice (sushi rice)
3 cups of water
1/2 cup rice vinegar
1 tbs vegetable oil
1/4 cup sugar
1 tsp salt
Directions:
1. Rinse the rice in a strainer or colander until the water runs clear. Combine with water in a medium saucepan. Bring to a boil, then reduce heat to low, cover and cook for 20 minutes. Rice should be tender and water should be absorbed. Cool until cool enough to handle.
2. In a small saucepan, combine the rice vinegar, oil, sugar, and salt. Cook over medium heat until the sugar dissolves. Cool, then stir into the cooked rice. When you pour this in to the rice it will seem very wet. Keep stirring and the rice will dry as it cools.
Directions for California Rolls:
1. Use sheets of seaweed that can be purchased from Walmart, Many lands, Chows or another ethnic food store. Cover the seaweed with a layer of the sushi rice (see above).
2. Put thin strips of vegetables of your choice on top of the rice (cucumber, carrots, avocado, etc) then put fish crab or whatever else you choose to put in it.
3. Roll everything using bamboo or plastic wrap. Eat with soy sauce or refrigerate until time to serve.
